Three days into my 30 day journey!! Trying to find something NEW to try or do everyday is challenging but fun. I was nervous to post my day THREE, I'm not one to share my personal life on social media everyday but after sharing this snippet of my life, I was happy to reflect on my favorite things! I also realized as I composed this list that I had a TON of favorite things and I needed to DO some of them before the year ends. Well I won't be able to do number ONE before the year ends, this Connecticut weather remains below 30degrees daily and SNOW is on the way. 😳☃️ Yet there are many other things on my list that I enjoy but don't get to do often: however I am looking forward to number 5!!! Now if you know me, you know I LOVE to cook and I love trying new dishes. However, making a Chinese dish was definitely going to be far out of my comfort zone and I was super nervous to try this. My son is a huge lover of Chinese takeout, so you can imagine his disappointment when I announced to my family, a few months back, that we would no longer EAT CHINESE takeout🙈🙈. The response was unanimous, anger and confusion from my whole family.🙃 I persevered though and set out to make Tasty, but healthy dishes for my family. So far no one is complaining and bellies are full. The challenge to make this dish was HUGE and I honestly wasnt confident that I could pull it off and neither was my son. So I challenged him to cook the dish with me, which was a huge challenge of my patience🙈but I persevered. Final Verdict: 'Ma I have to admit, this is way better than takeout"👀 I almost hit the floor in disbelief lol. So I was smiling big and eating well with my family for DAY one of this challenge.
