Happy New Year!!

With single digit temps outside and snow falling...I am SO ready to welcome in a New year! My 30 Day Challenge ended officially today but I feel like I can't stop!!! Trying NEW things everyday has expanded my view and it life looks good from where I'm standing.
_The WIN is near! I strongly hear the Lord confirming this word repeatedly to me and so once again I'll share it with you. YOU WILL WIN!! Not just because it's a New Year but because God has spoken it!

I don't know about you but I've had a lot of losses this year and the year before. At one point it seemed as if all I was doing was...losing! The reality was, I was winning in a new and unfamiliar way and where things in my life were dying off, God was birthing out the NEW life I couldn't see yet. It takes great faith to believe in LIFE, when death is all around. It takes even greater faith to believe in a WIN, when your surrounded by losses.
__I believe in the faith you have! Deep down inside of you, there's a part of you that hasn't given up, that hasn't relented all together and wants that WIN. I want you to tap into that place in your heart and fill it with faith. Let's start the first 3 days of New Year together, with a WIN mindeset.

Welcome! Today I want to share something very REAL with you. Let's start a conversation about the DARk places of our lives, where we usually don't invite GOD.

Meditate on these scriptures daily. Commit them to memory and use them as weapons of mass destruction. Fight against the darkness with the word of God and prayer. Stay consistent in the fight and the LIGHT will overcome the darkness!!

Hey guys! I hope your Holiday season is going strong with Joy and cheer. My 30 Day Challenge is proving to be more powerful than expected! See I started out aiming to try ONE new thing a day for 30 days but honestly, I've ended up trying MORE than one thing everyday. Shocking!!

Three days into my 30 day journey!! Trying to find something NEW to try or do everyday is challenging but fun. I was nervous to post my day THREE, I'm not one to share my personal life on social media everyday but after sharing this snippet of my life, I was happy to reflect on my favorite things!

I also realized as I composed this list that I had a TON of favorite things and I needed to DO some of them before the year ends. Well I won't be able to do number ONE before the year ends, this Connecticut weather remains below 30degrees daily and SNOW is on the way. 😳☃️

Yet there are many other things on my list that I enjoy but don't get to do often: however I am looking forward to number 5!!! ''Tis the season to be giving and honestly I LOVE giving to others. Do you?

Day 1-30 Days with Kay

Day one is off to a GREAT start my friends! Today I made Chicken Fried Rice for the first time!! Now if you know me, you know I LOVE to cook and I love trying new dishes. However, making a Chinese dish was definitely going to be far out of my comfort zone and I was super nervous to try this.

My son is a huge lover of Chinese takeout, so you can imagine his disappointment when I announced to my family, a few months back, that we would no longer EAT CHINESE takeout🙈🙈. The response was unanimous, anger and confusion from my whole family.🙃

I persevered though and set out to make Tasty, but healthy dishes for my family. So far no one is complaining and bellies are full. The challenge to make this dish was HUGE and I honestly wasnt confident that I could pull it off and neither was my son. So I challenged him to cook the dish with me, which was a huge challenge of my patience🙈but I persevered.

Final Verdict: 'Ma I have to admit, this is way better than takeout"👀 I almost hit the floor in disbelief lol. So I was smiling big and eating well with my family for DAY one of this challenge. Check out some more pics and the recipe below.

p.s. I did NOT use Soy sauce, I used chicken broth instead😉
✔️Cook your meat seperate
✔️Cook your veggies separate
✔️Cook your Rice seperate
ADD them all together in a Wok or Large skillet and add half cup of Chicken broth.
✔️Enjoy!!!!!
