Holiday Eats!

Yes I’m a PINTEREST junkie and I’m proud of it 😂. As a Mom of boys I cook constantly!! It’s like their stomachs are a bottomless pit some days. The Holidays are my favorite time because that’s when I get to show off my cooking skills to others. Yes I enjoy cooking! It makes sense to enjoy it because I enjoy eating.
However, it’s super hard to eat healthy during the Holidays-right? Well it is for me. I want to have all of my cravings and deep fry anything that can move 🤦🏽‍♀️🤦🏽‍♀️. So I’ve discovered, through many failures, that I have to be intentional about eating healthy if I really want to do it.

I’ve recently discovered a great way to get back on track with feeding my family healthy food and saving time while I do it. MEAL PREP!! It’s not just for the fitness buff or the Veagan girl next door. If your pressed for time, like I am and your serious about eating right, the preparation is Key! Starting is easier than you think.

  1. ​Start Sunday Afternoon, preparing your food for the week
  2. Buy cute storage containers ahead of time (3-4 sections) see my pics below
  3. Shop Friday for your Meats n Veggies!

the easiest Meal Prep bowl is Chicken and Veggies. I’ve included my recipe below. Remember to keep it SIMPLE. Buy some Chicken breasts, your favorite veggies and Meat scissors . (Meat scissors are a secret weapon in every kitchen ⚔️. ) Turn on your favorite playlist and get cooking.

Chop up your chicken breast into cubes (this is where the meat scissor makes life easy)if you don’t have a meat scissor, use a SHARP knife.
Season however you like. I use Adobe seasoning and fresh Rosemary.

Load up your chopped veggies. I added mine at the last minute because I like a “crunch” to my veggies. You could also cook your veggies separate if you like. (Cooking together saves TIME😉)
I added onions and fresh garlic to my chicken and veggies mix to give it great flavor.

I did cook SOME of my veggies separate. I roasted these Chickpeas (my fav) at 385degrees for about 15 min. Season as you like. I also chopped and roasted some Sweet potatoes (yum) alongside the chick peas. I also added some Avocados (but don’t do those overnight, add them right before you get ready to eat😉) Black beans are another favorite of mine and if you want to add rice that’s cool too. I use Jasmine rice (it’s fluffy and yummy)
DONE!!

Add your meat and veggies to your containers and do a dance because you won’t have to cook tomorrow 💃🏾
